I think it’s the dressing, which is a homemade pineapple flavor, that really takes this dish over the edge. It’s one of the most delicious dressings that I’ve ever made. I think I could even eat it plain, but I don’t, because that would be silly. I am definitely licking the spoon clean before I put the pasta in the fridge to chill though. I like to make a little extra dressing because I like my salad extra creamy. After it sits, the pasta may soak some up so use your best judgement in your own situation. I don’t think you can have too much.

8 oz rotini or bow tie pasta
1 (14oz) can Dole pineapple tidbits, juice reserved
1 red pepper , diced
2 cups diced ham
1 green onion , thinly sliced
1/2 cup Hellmann’s mayonnaise or dressing
1/4 cup Daisy sour cream
1 tablespoon dijon mustard
1/3 cup pineapple juice
1 teaspoon cider vinegar
1 teaspoon honey
1/4 teaspoon garlic powder
black pepper to taste
Cook pasta according to package directions. Drain and run under cold water.
Whisk together all dressing ingredients until smooth.
Combine all ingredients in a large bowl gently toss with dressing. Refrigerate 2 hours before serving.
Store refrigerated up to 5 days.
