When I was invited to my niece’s baby shower, I asked my sister if there was anything that I could bring to share with the guests. She was doing all of the cooking herself in order to save some money, so she requested that I bring a salad of some kind. She said she had the macaroni and spaghetti salad covered, so I figured potato salad was going to be the only option. I didn’t really have my own recipe for it at the time, so I had to start looking around to see what I could find. I checked online, because let’s face it, that’s where you can find just about anything you are looking for, and even what you aren’t. I discovered this version of the dish on Group Recipes. It looked fancy enough for the party, but simple enough that I could make it.
I had to do up four times the amount listed in the ingredients list because there were going to be about 50 people at the party and I wanted to make sure that there was going to be enough to go around. Thankfully, there was plenty of other foods. This salad was the first one to disappear.
Everyone that had a chance to try it came up and told me how good it was. I was grateful for all the compliments, but I was more happy about the fact I was able to help my family out with this very important day!
