My family loves Mexican food. When my kids were little, I would take them to Mexican restaurants for tacos at least once a week.
My husband would often meet us there after work and it became our night for family time. We bonded over tacos and ate queso dip to our heart’s content. We were always so thrilled to enjoy our family time, and everyone from my husband and me down to the littlest of kiddos looked forward to that weekly Mexican meal. Well, now my kids are grown and have their own kids. My grandkids love Mexican food, too, probably because I trained my kids to like it.
We no longer have our weekly Mexican restaurant dates, but we have monthly Mexican dates where they come over my house and my husband and I prepare traditional Mexican meals for all the kids and grandkids to enjoy. We recently ran across this Mexican dip and knew we had to incorporate it into our monthly dinner!
It is satisfying, easy to make, warm and so delicious with a big bowl of chips. We like this with all kinds of cheese inside and like to switch it up by adding veggies and spinach for color, flavor and texture. It all makes it even more delicious!
