I love the practicality of a good casserole dish.
So often I have my grandkids over for the night and I need to help them with their homework, guide them to shower (and even step in to wash those girl’s long hairs), and read them a story or watch a movie sometimes. I also have to feed them dinner (sometimes courtesy of McDonald’s…I mean what are grandmas for right?) and think about breakfast, too. As much as I am okay with giving them a treat for dinner, I like my grandbabies to head out to school with a full and happy tummy.
Well, to make that happen, I often need to think and plan ahead. I search for recipes online and have a Pinterest board titled “grandkids.” There I put all the recipes I think my grandkids would like, whether for breakfast, lunch or dinner.
A few of them are “maybes” but the majority are recipes that I know they would love. On that board was this egg and chilies bake that I knew I had to make this time around. I sent my husband out to get the ingredients and we had this whipped up in no time!
