I remember the first time I tried making cabbage soup… It turned out awfully tasteless and not like something anyone should ever eat. So it took me a few years before I dared start thinking about another cabbage soup recipe again! I am so glad I chose this one, when I finally decided to give it another go. This was so delicious!
This zero point cabbage soup has received rave reviews from my friends and family, which is not a surprise to me at all. Try this once, and you’ll want to make it again and again!
Ingredients
3 cups beef broth (vegetable or chicken broth will work, too)
2 garlic cloves, minced
1-2 Tbsp tomato paste (optional
2 cups chopped cabbage
1⁄2 onion
1⁄2 cup green beans
1⁄2 cup chopped carrot
1⁄2 cup chopped zucchini
1⁄2 teaspoon oregano
1⁄2 teaspoon basil
salt & pepper
optional: cooked ground beef, leftover shredded chicken etc.
Instructions:
Spray pot with nonstick spray. Saute the chopped onions, carrots and minced garlic cloves for 5 minutes.
Add the remaining ingredients, EXCEPT zucchini. Season to taste with salt and pepper.
Simmer for a few minutes until veggies are tender, then add the zucchini (and any meat, if using) and simmer for another 5-10 minutes.
