I don’t know about you guys and gals but I’m a huge fan of stuffed peppers.
I love the filling in the hollowed out peppers and the way the veggies cook up nice and tender. However, making stuffed peppers is kind of a pain, especially when your kids won’t eat the dang peppers! My children will gladly eat the filling but they won’t touch the peppers. So, I always feel like we are wasting massive amounts of food when i make stuffed peppers as the peppers themselves always get pitched. What’s a mother to do?
