Do you ever face the same problem I do? You’re having a crazy day with so much to do that you don’t have time to fix a good, healthy lunch (or so you think).
Instead you end up eating something heavy, sugary and overall bad for you. Well, it used to happen to me almost every day, until I made a decision I would spend a moment every night figuring out what to have for lunch the next day. It had to be tasty (duh!), light and healthy – but most of all I really wanted it to be easy to put together. It took me a while to figure out what it was but I finally found the perfect recipe!
This chicken salad won’t take you longer than five minutes to prepare, and you can tweak it any way you like to keep it fresh and interesting. I’ve had this several days in a row, with small adjustments, and it always tastes like a new dish!
