Cookies are my favorite treats. I have mentioned that so many times in the past, but it is absolutely true. They are easy to carry around, have loads of fun toppings and are full of flavor and deliciousness. My favorite are classic chocolate chip cookies, but every now and then I like to venture into something new, specifically a new flavor. I have tried sugar cookies, lemon cookies, red velvet cookies, oatmeal cookies and so many more. They are all great, but sometimes I like to get even more adventurous.

 

These cookies here are a twist on my classic chocolate chip cookie. They have loads of chocolate chips, but on top of that have oats, cornflakes, coconut and pecans. With all this deliciousness in one cookie, you will be hooked after the first bite. Not to mention, if you eat a few of these, you can practically count it as a meal! Full of protein and chocolate, you cannot go wrong. These are so easy to assemble and in return you will get some big hearty cookies full of flavor and the perfect texture. You will see how easy these are to prepare and will get hooked on making these. Your family will love you for it, too!

One of my favorite things to eat is bread. For real, I know it is totally unhealthy, but I have bread at least once with every meal. And most of the times, only bread IS my main meal (for breakfast at least!). I love chewy, soft bread that falls apart and I love crusty bread that is completely crunchy. I believe each type of bread has a different role in what I am going to eat.

 

For example, a soft bread with barely any crust is perfect for a grilled toast in the morning. It is soft and airy and delicious for breakfast. If I am serving an appetizer platter of fine cheeses and ham, I like a hard, crusty bread that has a great crunch. That is the perfect combination for me and I can eat that as a meal in and of itself. Now I have found the perfect recipe to turn into that crusty bread. This recipe is for a crispy bread that is baked in a Dutch oven. You do not need to knead it and it still turns out perfectly. It rises and everything tastes beautifully as bread ought to. This is going to be a hit at your dinner table!

One of my favorite treats is Nutella. I remembered when I first discovered it. I thought it was something new, but apparently it had been around for ages. I had spent so much time learning to make creamy and luscious chocolate lava cakes when I realized that there was something I could dollop inside that would completely change the way I baked my lava cakes. NUTELLA! With a spoonful in the center, it would always burst perfectly and make me such a happy camper! Now I have learned to make so many other things with Nutella. Think soufflés, cookies, brownies and cakes. I have tried so many things and Nutella always go wrong. It has definitely never let me down.

 

Recently I discovered this recipe for easy Nutella brownies. So easy, it only has 2 ingredients in the entire recipe. If you want to be REALLY generous with your ingredients, dust with powdered sugar and serve warm with a bowl of ice cream. It is to die for, I assure you! Give this a try on your next lazy afternoon and you will see what a hit these are! They are soft, chewy and perfectly full of Nutella.

When I think of sweet potato, Thanksgiving is what comes to mind. My husband and I don’t really eat sweet potatoes at any other time of year. Maybe just one more dish that I make that is a scramble of chopped sweet potatoes and ground turkey. It is really good, but the sweet potato does not really shine as the star of the meal. It honestly just tastes and feels like regular potatoes. One other that we dinnertime make its including diced and cooked sweet potato in our omelets for breakfast. It is a nice sweet touch to our salty breakfast. But that’s not really a recipe.

 

Lately I have really been wanting to include sweet potatoes more and more into our meals. It just seems like it is such a great vegetable that fills you up and adds a touch of sweetness to it all. The other day while browsing Pinterest, I found a really neat recipe! It was for sweet potato cornbread. Since I know my husband loves corn, I figured I would go ahead and make it. I was so impressed. The sweetness of the sweet potato gave it such a wonderful touch of flavor and texture as well!

The other day, I was at a new fusion restaurant in my area. It is called Latin House and fuses Hispanic and American cuisines. They take really plain foods and make it into some crazy combinations. My husband’s favorite is the Elvis burger. I do not know if you have ever had one, but at this restaurant, that is a burger served with a smear of peanut butter and jelly topped with a sweet plantain. It is such a crazy cool combinations of classic meals that turn out to be so cool!

 

Well, one of my favorite things to eat there is a potato chip crusted chicken. To be honest, I totally do not understand how this equates to fusion, but it is on the menu and delicious. It is a juicy chicken breast, seasoned perfectly and then they bread it with any potato chip you would like. They have so many options such as Lays, Doritos, Fritos, and any other chip you could possibly think of. You can even mix and match and go for a combination of multiple types of chips. It is truly delicious and so much fun to create your own combination of potato breast chicken breading.

I tend to always go the mall about once a week as a little outing for my grandma to enjoy herself. She has really been getting ill lately and cannot do much on her own, but she still enjoys going to the mall and seeing the stores and getting a snack in the food court. Since she needs oxygen 24/7 and cannot walk long distances, I have to have her portable oxygen fully prepped and the wheelchair ready to go. It is quite a hassle honestly, to make sure everything is good to go, but I would not trade those moments with her for anything.

 

One thing we love is going to the mall for the cinnamon rolls. There is a Cinnabon at our local mall as well as another station for cinnamon rolls and we so love stopping to get a little snack in the mid afternoon or enjoying them for breakfast right when we get to the mall. With a cup of coffee, there is no better afternoon treat to enjoy. One of our favorites is when they make it in lasagna form. Not only is it cool, but it is totally delicious and turns out, easy to make as well!

One of my favorite things to enjoy when we would go over to the Amish just south of my town was their homemade apple butter. They pride themselves in the amount of apple butter they make and how it is all natural and perfectly sweet. When you walk into their little house where they sell everything from cinnamon rolls to fresh produce and milkshakes, you will smell an amazing aroma of apples simmering away in it’s own juices with loads of spices such as cinnamon and nutmeg. All of these combined create the perfect treat!

 

Last year, I hosted Thanksgiving for the first time and decided I wanted to give something to my guests as they left. I did not want to bake something because I knew we would already have a lot of leftovers from the actual day, so I decided to go with a jar of homemade apple butter. I popped out my crock pot and just dumped four ingredients: apples, cinnamon, sugar and salt and let those simmer away all day. In the evening, I took an immersion blender to it all and blended it until it was smooth. It was the perfect (and might I add very easy) treat to make for my guests.
