Are you hungry for Mexican food but you don’t want to deal with all of the hassle that goes into making it? I hear, ya! That’s why you need to stop what you are doing and check out this yummy recipe for the easiest Mexican casserole in the world. It’s super simple to make and produces a satisfying meal filled with all of the tasty Mexican flavors that you crave. My friend and neighbor Sally actually made this a few weekends ago during a Fall book party she was having and it was delish!

I asked Sally for her recipe and she pointed me in the direction of the website that she got it from and now I’m going to share it with all of you because I was so impressed by it. The casserole is meant to be scooped up with tortilla chips but feel free to scoop the goop into warm taco or tortilla shells and enjoy it that way. I like piling my Mexican casserole high with salsa, sour cream, and refried beans. How will you enjoy this yummy south of the border treat?
