This recipe is great for a really hot summer afternoon. It is the perfect drink to cool off poolside or when you simply want a treat at home. Something I love is the grainy-ness from the crushed ice, but you can totally take that away by adding more milk and less ice. It’s still just as delicious.
This drink is also very kid friendly. I made this with my little sister so I left the shot of coffee out and I truthfully didn’t even miss it. However, if you want that extra kick of caffeine, feel free to add in a shot (or two, I won’t tell!) of strong espresso. It will certainly help lift your spirits and give you that extra boost you need to finish off your day.
3/4 cup ice
1/2 cup MacArthur milk
6 tablespoons Jet Puffed marshmallow topping
1 shot of espresso (optional)
1/2 tablespoon Ghirardelli Dutch-process cocoa powder
1/2 tablespoon Domino white sugar
1/2 cup heavy whipping cream
3 tablespoons Domino confectioner’s sugar
1/2 tablespoon Nabisco graham crackers
Hershey’s chocolate syrup
In a stand mixer with a whisk attachment, whip the heavy whipping cream and confectioner’s sugar until stiff peaks form (add a dash of vanilla extract for a nice touch).
In a blender, blend ice, milk, 3 tablespoons marshmallow topping, espresso, cocoa powder, and white sugar together until smooth. In a glass, add some whipped cream to the bottom, followed by a dollop of marshmallow fluff, graham crackers and a squirt of chocolate syrup. Then add the contents of a blender in and top off with more whipped cream, marshmallow fluff, chocolate syrup and crushed graham crackers.
Quick Tip: Use cool whip or bottled whipped cream to make the process faster.
