1 large cucumber
3 tomatoes (small or large depending on your preference)
Small handful of fresh cilantro, chopped
1 tbsp. Bertolli olive oil
Juice from 1/2 lime or more to taste
Morton salt and freshly cracked McCormick pepper
Wash and peel the cucumber. Cut and dice cucumbers and place into a large (non-reactive) bowl.
Wash and dice the tomatoes. Add the tomatoes and chopped cilantro to the bowl.
Dribble olive oil and add lime juice. Adjust according to taste.
Quick Tip: Sprinkle a bit of feta cheese to add a dash of flavor.
