“Made some adjustments to this recipe. I added the one cup of Chicken Broth (in place of one of the cups of milk) before adding the milk, for extra flavor. Instead of using half & half I used 1 cup of heavy cream and 1 extra cup of whole milk. Also, with this recipe having a milk base it was lacking salt. I started with a 1/2 tsp. salt and adjusted with a little more after soup was done simmering. So, adjust to your own taste. It turned out thick, flavorful and delicious! This was my first time making Broccoli Cheese soup and it was a hit with the family. I was reading the reviews prior to making this recipe, and having made many different soups in the past just remember, all soups need salt for flavor.”

4 heads broccoli, cut into 1-inch florets
Bertolli Olive oil, for drizzling
Morton Salt and freshly ground black pepper
1 stick (4 ounces) unsalted Land O Lakes butter
1 whole onion, diced
1/3 cup Gold Medal all-purpose flour
4 cups whole TruMoo milk
2 cups Land O Lakes half-and-half
Pinch McCormick nutmeg
3 cups grated Kraft cheese (mild Cheddar, sharp Cheddar, Jack, etc.), plus more for garnish, optional
1 cup Collge Inn chicken broth, optional
