Everyone loves a Sunday brunch, whether you do it every week or just once in a while. But what to make for that Sunday brunch? Well, this time the answer is easy. This delicious Breakfast Sausage Croissant Bake is perfect!

Not only does it look delicious, but it’s a perfect dish that can be made ahead of time and the left overnight in the refrigerator. That means that in the morning, all you have to do is pop it in the oven and wait for it to bake!

This bake is made with spicy Italian sausage and buttery croissants, but it also is smothered with both Parmesan and Gruyere, or Swiss, cheese.

You really can’t go wrong with this delicious breakfast bake. All of your favorite breakfast foods are all in one simple and easy dish. It’ll be a hit with the whole family for this week’s Sunday brunch.

Tacos are one of those meals that are quick and easy to put together. They are always packed with fresh ingredients – lettuce, tomatoes, pico de gallo and onions – and have a fresh flavor that is perfect for a quick and easy meal. Quesadillas are another one of those things that are quick and easy to make. So why not combine the two into something really amazing?

Luckily for us, Ree Drummond, over at The Pionneer Woman Cooks, has done just that. She’s combined two delicious menu items into one – Taco Quesadillas. And are they ever amazing. Richly seasoned taco meat with rich cheese and topped with fresh and spicy pico de gallo. These quesadillas are just as quick to put together as tacos, but they give a whole new twist to an old favorite. Ree makes a really simple and delicious meal. Add all the fresh sides you can and you’ve got a “one dish” meal that’s new and refreshing!

Meat lovers beware! This vegetarian Eggplant Rollatini will have you reconsidering your carnivorous ways. This Eggplant Rollatini is very similar to Eggplant Parmesan. Thinly sliced eggplant are filled with ricotta cheese and then placed in a baking dish. Everything is covered with a marinara sauce and topped with mozzarella and parmesan cheese.

Because this is made with eggplant instead of pasta, it’s very low in carbs, so it’s a great choice if you’re watching your carbohydrate intake. It also gets you another serving of vegetables the sneaky way. The eggplant should be young and tender, and you’ll never know that you’re not eating traditional lasagna.
