Ideally, you want to use a Dutch oven for this recipe, though any large pot should work in a pinch. First cook the sausage in the vegetable oil on medium heat for about five minutes. Then add your Cajun “holy trinity”(celery, bell pepper, and onion) and cook until the onion is translucent (about eight minutes). Then throw in your garlic, give it about one minute to get fragrant, and then add the chicken broth and turn up the heat to medium high, to bring things to a boil.
Stir in the rice and kidney beans, turn down the heat to a simmer (on my electric stove, I usually turn it down to somewhere between a “2” and “3”, the high end of low), add however much creole seasoning you like, and cook, covered, until the rice is tender (12 to 15 minutes). And voila, a full Southern meal in a single pot!
Ingredients
1 tablespoon vegetable oil (I used LouAna.)
1 pound cajun smoked sausage (andouille) or other smoked sausage, sliced into ½-inch pieces (I used Aidells Cajun-style andouille; go for a milder smoked sausage like Conecuh if you are sensitive to the spicy stuff.)
1 onion, chopped
1 green pepper, seeded and chopped
1 rib celery, chopped
2 cloves garlic, minced
2½ cups chicken broth (I use Swanson.)
2 (15.5-ounce) cans red beans (or red kidney beans), drained and rinsed (I used one can of Bush’s Best dark red kidney beans and one can of Bush’s Best light red kidney beans.)
2 cups of instant rice (I used Uncle Ben’s instant rice.)
creole seasoning (I use Tony Chachere’s for a lot of recipes.)
Instructions:
Add the vegetable oil to a large dutch oven over medium heat. Add the sliced sausage and cook for 5 minutes. Add the onion, green pepper, and celery. Cook about 7 minutes until the onions are translucent. Add the garlic and cook until fragrant, about 1 minute. Add the broth and bring to a boil. Stir in the beans and rice. Reduce the heat to a simmer and add creole seasoning to taste. Cover and cook for 12 to 15 minutes, or until the rice is tender.
