This Cake Really Is a Dream!

This Vanilla Dream Cake is sure to be a winner at any gathering. A little assembly is required, but with prep, baking, and assembly time all adding up to about an hour and a half, it’s not super-complicated and not any all-day labor of love.

I love a good chocolate-based dessert now and then, but I must confess that I love a rich vanilla flavor as much as I love chocolate. I don’t know if that puts me in a minority or if I am just not that picky about what flavors that I will try, but I don’t believe that a vanilla-based recipe has to be boring. Done right, vanilla actually can be rather exciting. This vanilla dream cake really lives up to its name!

My husband is not a fan of cakes (I know, there’s something profoundly wrong with him…) but this cake here is an exception. I swear he could eat half of it in one go – and the other half a couple of hours later! This is definitely a cake that will please even the pickiest of cake eaters!

The Easiest Mexican Dinner You’ll Ever Make

This Easy Chicken Enchilada Casserole brings all of the flavor without all of the hassle. With just four ingredients and a few basic steps, you can have a Mexican-style meal for six on your table in just over an hour.

I do enjoy my Mexican and Tex-Mex cuisine, but preparing each individual serving yourself (or even, in the case of basic tacos, setting things up for people to serve themselves) can be more than a bit of a hassle. The easiest solution for this is to combine everything into a casserole, as this chicken enchilada casserole recipe does. It’s simply good Mexican flavor without much hassle or effort at all!

This is also the perfect dish to serve for a large crowd. You can easily double the ingredients and make this in two casserole dishes – that’s plenty for everyone at your next get-together! Or maybe you’d just like to have enough leftovers to heat up for lunch the next day..?

If you like simple, lightly textured cakes, and you like the zest of lemon, you’ll love this Iced Lemon Pound Cake.  It bakes in about an hour, fills two 9 X 5 loaf pans, and makes about 24 slices.

Most people go to Starbucks exclusively for the coffee, but they have some nice dessert treats, as well. One of their more popular dessert items is the iced lemon pound cake. As it turns out, it is rather easy to make this treat for yourself at home.

This Homemade Rum Cake is perhaps best suited to holiday gatherings, but it is a straightforward enough recipe that you can make it most any time that you like. It takes about an hour to prep and bake and makes about 10 servings.

Even if you aren’t a drinker, you have to appreciate the depth of flavor that certain spirits can give a dessert. (I remember the whisky sauce that my great-grandmother put over bread pudding–that was to die for!) I love the rich molasses flavor that the dark rum gives to this cake.
