Beans For The Ages – YUM!

The cooking directions are so simple, you could ask your kids to help you out in the kitchen.  Basically, you mix everything other than the cheese together, bake it in the oven at 350 F for about an hour, put the cheese on top, and put it back in the oven just long enough for the cheese to melt.

Given one of the main ingredients, the obvious meal pairing for this would be some kind of pork dish like baby back ribs or pulled pork sandwiches, but it would also go nicely with steak, burgers, or even a slice of meatloaf with a small green salad.

 

Ingredients

1 lb. bacon, cooked and diced
1 (15 or 16 oz.) can kidney beans, drained
1 (15 or 16 oz.) can small lima beans, drained
1 cup ketchup (I used Heinz)
1 cup brown sugar
1 can pork & beans (I went with Van Camp’s pork and beans)
1 tsp dry mustard
1 tsp vinegar
1 cup grated cheddar cheese

 

 

Instructions:

In a bowl, mix together all of the ingredients, except for the cheese. Bake for 1 hour at 350°. Top with cheese. Bake in oven until cheese is melted.
