The process is fairly simple: half them, put a few things on there, and then let the oven work its magic. If you want to add a bit of an earthy contrast to the sweet spices here, you could add in a bit of sage, as well, though it is perfectly delicious this way.
One half of a good-sized butternut squash easily makes for a good side for one person, so strictly speaking, this makes enough for two people, but you can very easily expand it, obviously. As for what to make with it, unless you are really careful with your spices and flavor choices, I would stick with a fairly mild meat, such as roast chicken or roast pork. If you need a second side, consider having some black-eyed peas or pinto beans with it.
Ingredients
1 medium butternut squash
1 tbsp of butter, melted (or coconut oil, but I just went with Land O’Lakes butter)
Cinnamon
Allspice
Nutmeg
Brown sugar (optional, but I strongly recommend it)
Instructions:
Preheat oven to 400 degrees.
Cut squash in half length wise. Place squash in a baking pan, and rub with melted butter.
Sprinkle the cinnamon, allspice, nutmeg, and brown sugar. Bake in the preheated oven for an hour. Depending on the size of your butternut squash, it may take less or more time to cook thoroughly.

Quick tip: An easy way to halve the butternut squash: cut off a tiny bit from the bottom of the squash in an even slice so that you can sit it down first, and then cut the squash in half length wise.
