This Stuffed Grilled Chicken is chock full of delicious cheese, peppers, and a savory seasoning blend that is sure to wow your guests!  It’s simple and quick enough for enjoying a quiet grilled meal with the family but delightfully gourmet enough to be a big hit at even the biggest grill-out or Labor Day celebration.

 

Though I’ll probably be able to carry on for a few weeks afterward, the official end of grilling season is fast approaching, and though there is plenty that I love about fall (you should see how I decorate for Halloween!), that does make me a little sad.  Truth be told, this time of year weighs on me a bit for a lot of reasons.  My escape: good food, especially exciting good food.  This recipe fit the bill nicely, with just the right amount of Southwestern flair, and it was all ready in a little over half an hour.  Not bad at all.

Fries are a very common side and appetizer, and for good reason.  These Buffalo Fries are a really nice twist on that classic, with a nice amount of heat to excite your palate, with just the right amount of blue cheese to cool you back down.  Since you can make them in under an hour, it’s a great idea for a party appetizer or a nice wake-you-up side for your next home-cooked meal!

 

Hey, I can’t knock simple.  I really love the simple sides and appetizers, sometimes.  I have certainly eaten plenty of good, old-fashioned French fries in my time, cooked the deep-fried way, and I have to admit that they go well with a lot of things.  But sometimes, you need to shake things up a bit, am I right?  I have to admit, I was a bit intrigued by the notion of fries that technically aren’t, well, fried.  And with that nice combination of heat and creamy coolness…well, let’s just say that my sense of curiosity was too piqued NOT to try these.  I’m glad that I did!

If you’re like me and you enjoy sweet pastries, you’ll love this Cinnamon French Toast With Cream Cheese Glaze.  Try this once, and you’ll be finding excuses to have “breakfast” all day, every day.  And it is surprisingly simple to make, which, in my opinion, means it’s a high quality breakfast dish! I love it when I don’t have to spend a lot of time making breakfast in the morning.

 

I can be really picky about my breakfast food, but a sweet treat like this is one of my breakfast favorites.  I’m a sucker for that cinnamon and sugar combination–and anything with a nice, creamy glaze!  These taste heavenly.  And they don’t look too bad on the plate, either. In fact, I’ve served these as dessert for friends and family, and they’ve all loved them just as much as I do.

A Super-Tasty Stew With a Curious Name

Ropa Vieja literally means “old clothes” in Spanish, and though, as the name implies, it may not be the most elegant-looking dish in the world, but it has a nice splash of color and is chock full of great, savory Latin American flavor. And this version for the slow cooker makes putting it together super-easy and leaves the meat as tender as ever.

 

Some days, you just want a nice escape.  And though I enjoy my escapists shows and love reading a good book, now and then, eating the right sort of meal can be a nice adventure to another world, too.  I broke out my Crock-Pot yesterday morning to put this Slow Cooker Ropa Vieja together, and by the evening, I was enjoying a delicious stew and imagining myself in some humble but bustling cafe in Puerto Rico.  Latin America does know how to do comfort food.
