I threw some sliced mushrooms into the mix during the last step, and it made for a delicious extra topping. Those herbs and balsamic flavor go wonderfully well with mushrooms! The balsamic vinegar really wakes up the tomatoes and herbs for a rich, complex, savory flavor, and having all of these delicious juices and toppings means that this dish will go very nicely with either rice or pasta. For that matter, if you cube the chicken, you can just serve it over some vermicelli or angel hair pasta. A crisp green vegetable, perhaps some green beans or asparagus, would also go nicely with this.
Now, I love the balsamic flavor, and balsamic vinegar is already sweeter and more subdued than other types of vinegar that you might think about using, but if you REALLY are worried about that balsamic bite, you can cut down on it a bit by reducing the amount of balsamic vinegar and adding a bit of Swanson’s chicken broth (or chicken stock, if you have some handy). Ingredients
6 skinless, boneless chicken breast halves
1 teaspoon garlic salt
ground black pepper (to taste)
2 tablespoons olive oil (I used Pompeian extra virgin)
1 onion, thinly sliced
1 (14.5 ounce) can diced tomatoes (I used Hunt’s)
1/2 cup balsamic vinegar
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried rosemary
1/2 teaspoon dried thyme
Directions
(1) Season both sides of chicken breasts with garlic salt and pepper.
(2) Heat olive oil in a skillet over medium heat; cook seasoned chicken breasts until chicken is browned, 3 to 4 minutes per side.
(3) Add onion; cook and stir until onion is browned, 3 to 4 minutes.
(4) Pour diced tomatoes and balsamic vinegar over chicken; season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Quick tip: If fresh herbs are available, use them instead of dried. Adjust the amount to taste!
