You will have these ready in about an hour, and you won’t have much to hassle over during that hour. Just flip the potatoes once, put the toppings on toward the end, and you’re done! Note that the green onions are optional, but I recommend them. They go really well with those savory cheese and bacon flavors. This treat can be eaten (and well enjoyed) by themselves, but they also go well with some sour cream or a simple, creamy dip. It’s just a matter of how hungry you are and what flavors you want. We made these potato skins on Superbowl Sunday and they were so easy to throw together. Everyone loved them! If I could eat potatoes the rest of my life, I’d be in heaven. They are definitely one of my favorite foods! I never met a potato I didn’t like. 😉
4 large baking potatoes (washed)
3 TB butter, melted (I went with Land O’Lakes)
2 teaspoons of kosher salt
1 1/2- 2 cups of shredded cheddar cheese
7 slices bacon -cooked and crumbled (or 1/2 cup bacon bits)
1 or 2 stalks of green onion, thinly sliced (optional)
(1) Pre-heat oven to 400°. Cover a baking sheet with foil and spray with non-stick cooking spray. Set aside.
(2) Wash potatoes and then cut the ends of the potatoes off and discard. Next cut the rest of the potatoes into approximately 1/2 inch slices.
(3) Brush both sides and edges of the potatoes with butter and sprinkle with salt. Place on the foil covered pan and bake for 30 to 40 minutes, or until lightly browned. Turn potatoes onto the opposite side after about 15 minutes, to brown the other side.
(4) When potatoes are done, top with cheese, bacon and (if using) green onions. Continue baking for 3-5 minutes, or until the cheese is nice and bubbly.
