It was the dreaded Thursday. I know it’s a lot people’s favorite day of the week because it’s only one day away from the weekend, but it’s my least favorite. We usually don’t have any groceries left by then because of all hungry kids that are constantly in the kitchen. With it being the day before pay day, the checking account usually looks pretty sad too. So, as the person responsible for feeding everyone, it can be a rather difficult time. Sometimes, I will just pull everything I have out and see what I can come up with. That’s how I came up with a recipe that is very similar to this one.
There was no meat in the house except for a couple of cans of tuna, so I used that as my base, and went from there. Surprisingly, it turned out just like this recipe from Recipe Lion. I really thought I had created something unique until I came upon this. It doesn’t matter who came up with it first.
All that matters is that it tastes good. Everyone at my table really liked it. My husband even asked if I had snuck up to the grocery store that day. Nope. We already had everything we needed. Score!
