You guys and gals, I am smitten as a kitten wrapped in a yarn ball with this recipe for Tijuana Caesar salad. Never have I ever tasted anything quite like it! This salad contains a very special root vegetable called “jicama”. it has the texture of a sweet potato and tastes a lot like coconut. It is absolutely delicious! I found this wonderful root veggie at Wal-Mart of all places. It didn’t cost very much and it is easy to work with. You might also have luck finding it at a local farmer’s market depending on where you live in the world.
I plan to make this salad for my husband’s family when they come to visit us next week. I’m always trying to impress my mother-in-law with my cooking skills.
