Close your eyes and just imagine these rolled up breakfast delights gracing your taste buds one forkful at a time. It’s all the flavor of your favorite cinnamon sugar cookies, but tender, fluffy and the perfect reason to wake up any day of the week. If I knew I had these babies waiting for me on my plate, I’d be up and running to the kitchen every single day. Add in a pot of fresh coffee and I’d be your best friend for life.
My gramps used to make snickerdoodle cookies, they were his forte. Try as I might I could never capture that same flavor and consistency. It was okay though, because I had those amazing memories! When I bit into these crepes, I was transported back to that simple time when he’d bake his cookies for us – it was a big deal! Long story short, I’m in love with these and you will be too.
