Hey, everyone! I hope you are all doing well today. So, I was in the mood for a bit of Tex-Mex food but I didn’t want to make anything heavy. I came across this recipe for texas Cowboy Caviar and thought, “What on earth is that!” I was all prepared to see some sort if weird fish egg junk. Yuck! However, I’m glad I read the recipe because Texas Cowboy Caviar is nothing like real caviar at all! it’s a bean and corn salsa mixed with all sorts of other goodies. This stuff is very easy to make and works well as a light lunch option.
I got the ingredients that I needed and started to whip up this awesome “caviar”. It only took me about 20 minutes to get everything chopped and tossed into the bowl. Most of the stuff I didn’t even need to chop as it was all canned. I guess the longest part was dicing up the avocado and that only took about 5 minutes. So yeah, this recipe is as easy as they come/ I ate this cowboy caviar with corn tortilla chips and it was uh-mazing! You have to try this stuff 🙂
