Every now and then a recipe surprises me with the “why didn’t I think of that level of ingenuity.” This is one of those recipes! I am truly in awe of this recipe, and I know you’ll be too!
I used beef for mine, but you could just as easily use ground turkey or chicken. I also used enchilada sauce instead of taco sauce because that’s what I had in the pantry. Mine turned out fabulously! When I told my family we were having Stuffed Shells, everyone was completely surprised that they turned out to be Mexican!
These shells are great for a potluck or a tailgate. Everyone will be amazed at your creativity! But most of all I’m just happy these are easy enough to make for a busy weekday meal.
