My son is allergic to peanuts. My mother in law, however, loves to make a peanut dessert that is crunchy and filled with peanuts. When our son was diagnosed, I remember calling her right before Thanksgiving and asking her to avoid anything with peanuts. She was super sad that she couldn’t make her traditional peanut treat.
That’s when I came across this recipe. This was the perfect compromise as it contains a nutty star of the show, and yet didn’t have any peanuts. Any because I know she’ll use the pecans that have fallen from her very own pecan tree in the backyard, I don’t even have to worry about cross contamination of any kind! How lucky am I? This recipe is crunchy and creamy in all the right ways. I love this little treat and it doesn’t hurt that it’s healthier than other versions either. I hope your family loves it as much as we do.
