If you have a garden at home, you know how quickly your summer squash can grow. For me it’s like the multiply overnight! Then I am left in a crunch to use it all while it’s good. I end up sharing with the neighbors, but of course I prefer to enjoy the fruits (or veggies rather) of my labor.
This dish is the perfect side, but it could eat like a meal for me. While my husband prefers to have meat at every meal, I am a vegetable lover. I could eat this nonstop. I love the tender zucchini and summer squash flavored with the simple flavors of Parmesan, bread crumbs, salt and pepper.
