Making pasta salad is one of my favorite things to do in the kitchen. For one, pasta salad kind of kicks of the spring/summer seasons because you know once you start consistently making them it is for a picnic or other outdoor event. I don’t know about you guys and gals but whenever my family has a picnic we always include some form of pasta salad. We also make potato salad, too because as I’m sure you already know, potato salad is the cat’s meow. Plus, salads like these are very easy to make and they taste amazing!
I really like this recipe for roasted veggies and cheese pasta salad. The penne pasta is cooked to a tender perfection and the addition of chicken makes this simple side dish a savory entree. It’s like hitting two birds with one stone. You get your side and entree in the same dish!
I find that this simple pasta recipe is great for taking on picinics, outdoor trips, or even to a church potluck. You can easily double or triple the ingredients to meet your needs. Enjoy!
