A few years ago a friend of mine spent a summer in Greece. When she came back, she was head over heels in love – not with a tall, dark and handsome Greek, but this thing called “phyllo”!
I always see phyllo dough in the store and think, man that looks tasty. Yet, I never have a use in mind for it. I know there are plenty of recipes and one of them is a favorite. Spinach pie is just to die for, so I may have to make that soon. I came across this recipe first and had to try.
I thought chicken phyllo casserole would have a better chance of being a hit in my home than anything featuring just spinach. Somehow saying, “It has chicken in it” makes it an acceptable meal. Yet, I still got my spinach fix because it’s in there too. Who says you can’t compromise with dinner?
