Boy, have I been cooking all kinds of festive meals during the holidays! We’ve all thoroughly enjoyed them, but I have to admit I was starting to dream about good old comfort food that wouldn’t take hours to make. This Bacon Mushroom Pasta Casserole is essentially macaroni and cheese with a savory upgrade, courtesy of the flavor of mushrooms and fresh-cooked bacon. And it isn’t difficult at all to make!
You’ll need just seven ingredients here, nothing too fancy–and the simple ingredients combine to make a really hearty dish. As a side dish, this casserole would go nicely with a wide range of chicken or pork recipes, or you can just serve a larger portion with a side salad and have a really quick and easy meal to warm you up on a cold midweek night.
