Don’t get me wrong, I love pasta in all of its many forms but I do not love the amount of carbohydrates that are associated with them. No matter which way you slice it carbs turn to sugar in your body and sugar impacts your glycemic index. This means that you undergo blood sugar spikes and that really isn’t a good thing. I really like the recipe on the next page because it uses zucchini in place of pasta. It’s a genius idea and when covered in creamy tomato sauce you can barely taste the difference. Other than the texture being a bit firmer and crunchier zucchini noodles are almost just like spaghetti.
