I will always love my mom’s tried and true classic meatloaf, but I am not afraid to switch things up and try something new. After all, how else would I have fallen in love with this lighter version? I was pleasantly surprised at this chicken meatloaf featuring… apples!
Don’t knock it until you try it! I was afraid at first too, but I have room in my kitchen and on my dinner table for both of these. The ground chicken is packed with flavor when combined with the apples and the perfect seasonings. It serves up well with a vinaigrette salad. You won’t be disappointed!
