For me personally fall has always been that time of year when I get carried away making all kinds of wonderful soups. I’ve tried so many different recipes – sometimes less successful, but this is one that definitely surprised me. I’ve made it twice already, tweaking the seasonings a little, and it has been a great hit! The best thing is, after a summer of heavy BBQ meals this is the perfect way to get back to a healthier kind of eating. This sausage, spinach and potato soup is surprisingly hearty and flavorful for only being around 300 calories per serving.
This is a great way to serve a healthy meal that nobody in your family will know is low calorie, unless you decide to tell them. This recipe is great to make in bulk and is easily re-heated in the microwave. We all know soups get even better the next day, when all the wonderful flavors have really come together!
