I have definitely had my fair share of morning coffee cakes but I’ve never had one quite like this. Ladies and gentlemen, this blueberry brunch cheesecake is da bomb. I’m not even joking. There are things in this cake that have never, ever crossed my mind before to put into a cake. For example, there are waffles and HAM in this recipe. Say what?! Yep. Waffles and ham. This brunch cake is filled with all the good stuff that keeps you going in the morning.
You’ve got plump blueberries, cream cheese, ham, and a delicious crumble topping. I could eat this cake for breakfast, lunch, and dinner of I had to. How about you?
When I fed this brunch cake to my husband and kids the other morning they were not expecting the flavor explosion that they got upon their first bites. My husband looked at me saud, “Honey, is there ham in here?” I told him that there indeed was. I got flowers that day. I have to think that those flowers are due to the addition of ham in this recipe. Enjoy!
