My mom has always been the best cook that I know. She was never afraid to take chances and try something new when I was growing up, and for that, I’m thankful. She would often get recipes from men and women at work. If she thought it sounded good, she was trying it out. I still remember like it was yesterday the day she brought home this recipe along with all the ingredients that were needed to make it. When she said it was pizza casserole, I wasn’t quite sure what to think. I usually wasn’t a huge fan of casseroles, but when you put the word pizza in front of it…I was intrigued I guess you could say.
When she pulled it out of the oven, it looked and smelled incredible. I took a nice big serving because I knew I was going to like it. Of course, it was just as good as I had hoped. It was pizza after all, and who doesn’t like pizza?
Ever since that day, whenever my mom asks any of us what we want for a meal for a birthday party or BBQ, the answer is pizza casserole. Most of the time, she doesn’t even waste her breath asking anymore. She knows what we are going to say.
