Potatoes are a staple part of a big breakfast on many tables and restaurant menus. Most of the time, we opt for white potatoes in one form or another. Some typical ways to prepare breakfast potatoes would be hashbrowns, home fries, fried, and shredded. Today, we will be veering from the norm and entering sweet potato territory. In fact, our entire breakfast will circulate around the sweet potato because we are going to use them to make a hash. This hash is really simple to make.
You can make this hash quickly in the morning for a hearty breakfast to feed your family. Serve it up over eggs and there you have it; a complete morning meal.
I like to make this hash in the fall when sweet potatoes a more sought after food. However, you can make this lovely little hash at any time of the year. Enjoy!
