I had invited some old college friends over for dinner at my house. From the last time that we had seen each other until that day, I had gotten married and had two kids! They had each gotten married too, and there was some little ones in their lives. The three of us were roommates, and for some reason, one day it hit me… I really missed hanging out with them. We all only lived about an hour away from each other, so it seemed silly that we weren’t spending more time together. I took the initiative to change that, and when they accepted, I couldn’t have been more thrilled. I wanted them to come back time and time again, so I had to make sure that dinner was perfect and that we all had a lot of fun. I had to find a recipe that I knew what be a hit.
When I was brainstorming, I recalled some lasagna roll ups that I had eaten at another friend’s house just a short time earlier. They were just like this recipe from Group Recipes, and I knew that it was going to be the one that was just right for all of us.
I had to make up a double batch, just because there were so many of us. When they walked in the door, I forgot all about dinner until someone mentioned being hungry. As soon as I brought these out, everyone ran to their seat at the table. They were a big crowd pleaser! The two pans were completely cleared out.
