A cousin of mine was having a graduation party for their son. We were close growing up, and we still kept in touch over the years, even though they moved away. I was happy to see the invitation in the mailbox for the party. I knew that we were going to be making the short road trip to attend and celebrate such a special occasion. She didn’t ask me to make anything for the dinner, but I wanted to. There were so many options though. I had no clue what they were going to have. I figured that there wouldn’t be much for desserts, because she never did like to bake.
I decided to whip up this strawberry icebox cake that I found on NeighborFood. Not only did it taste good, I made it before, it also gave a great presentation. I just had to be sure to keep it cold until we got there.
Everyone was so surprised to see us. They didn’t think we were coming at all, but that’s what I was hoping for. This cake was a huge hit, and the party was a lot of fun. I’m glad we went!
