A cozy little casserole made with sweet carrots, spices, and lots of yummy butter.
When it comes to holiday side dishes I am always looking for something new and exciting to make. My holiday dinners are quite elaborate and everyone always looks forward to the spread. This year, I am swapping out the sweet potato casserole for carrot souffle. I am a bit nervous about doing this because everyone loves the sweet potato casserole but honestly, they may not even know the difference! Carrots and sweet potatoes are quite similar in taste and texture. Plus, you get to add loads of butter and sugar to the mix. Yummo!
