I love the fact that I can use any parts of chicken for this wonderful slow cooker recipe. I also like to change things up by using different spices and veggies!
When I follow the recipe exactly, I get a country-style meal with all those beautiful herbs. Sometimes I like to go wild and add some hot sauce and cayenne pepper, and then I serve the chicken and potatoes with spicy tomato salsa. By adding your family’s favorite vegetables and spices you’ll make sure that this will become a staple in your dinner rotation, too!
1 whole young roasting chickens, rinsed (or use your favorite parts, for example chicken thighs)
3 small potatoes, sliced
1 medium-sized onion (optional)
Season both sides of the chicken to taste. If you’d like a bit of a kick, add some chili powder or cayenne pepper, too.
Put sliced potatoes in the bottom of the crock pot. Add onion chunks, if using. Put the chicken on top and cover.
Cook on the high setting for 4-5 hours, or low setting for 7-8 hours.
