I’m pretty sure this recipe would also work with pork chops, or turkey! In fact, I think that’s the next thing I’m going to try – BBQ marinated pork chops!
Although I don’t think I could get tired of this chicken even if I had it every day for the next two weeks… If you want a lean meal, just serve these with fresh, green salad. For a heartier option you could go with garlic mashed potatoes or potato wedges – and of course, one of my favorites; jasmin rice. It will give your meal some tropical flavor!
8 chicken breasts (ea. 4 oz)
1-1/2 cups BBQ sauce
1/4 cup worcestershire sauce
1/4 cup Kikkoman soy sauce
1/4 cup honey
2 Tbsp. fresh minced garlic
2 Tbsp. canned chipotle in adobo sauce, puréed
2 tsp. black pepper
2 tsp. kosher salt
Combine the marinade ingredients and mix well.
Save half a cup of the marinade and place the chicken breasts in the remainder of the marinade.
Marinate chicken refrigerated overnight. (8 to 12 hours)
Remove the chicken from the marinade and grill chicken breasts 3 to 4 minutes on each side.
Brush the chicken with the saved marinade before serving.
