There’s a lot to be said about potato salad and all of it is good. I seriously am so obsessed with potato salad it isn’t even funny. I love the stuff! From the tender taters to the hard boiled eggs, yummo! I’m sure we all have our favorite methods for making traditional potato salad and that is okay, however, today we aren’t making traditional potato salad. Nope, today we are making minted pea potato salad with an assortment of herbs and spices. Y’all, this tater salad is the bomb diggity. I’m telling you what, you’re gonna LOVE this.
If there is one thing that I know a lot about it is good food and this version of potato salad is definitely good food. Everyone likes it. The mint flavor is definitely there but it isn’t overpowering by any means.
