First off, I love my pancakes. I think they’re a great breakfast food that’s not too heavy and I love that you can top them with anything or nothing at all if they’re made right. I also love blueberries, so when I saw this recipe I knew it’d be an instant winner.
I would never think of pancakes as being in a casserole, but this works spectacularly. I find that when cooking even just for my husband and I, pancakes takes a bit of time. This casserole will fulfill your pancake craving but take much less time, and even feed a crowd if need be.

Quick Tip: Keep some syrup handy, but in all honesty this casserole needs nothing with the streusel to top it off!
