Hi again, folks! Boy, do I have a fantastic recipe for you all today. So, I’m sure some of you may have already heard of poke cake, right? If you haven’t, it’s basically a baked cake with tons of small holes poked into it. You pour a filling or frosting over the cake, and it fills the holes leaving you with a filled cake. Awesome, right? Right! I love me some red velvet cake, so when I stumbled upon this recipe, I was more than excited. Ecstatic, to be exact.
This red velvet poke cake is filled with cheesecake pudding and topped with chocolate cookies. Need I say more? In case you’re not convinced yet, I can tell you that my youngest son wanted this for his birthday.
Yep, you heard me right! No fancy birthday cake, just this incredibly yummy poke cake – and it was a huge success! I shared the recipe with so many mommies, I bet they’ll be having this for many birthdays going forward!

Quick Tip: You can use the end of a wooden spoon to poke holes easily in your cake.

I do a similar cake using a Strawberry Supreme cake mix, frozen, sweetened strawberries (thawed) and Coolwhip mixed with vanilla pudding.
Bake cake. Poke holes. Puree berries and pour over cake. Let stand awhile for berries to soak in. Mix pudding with 1 cup milk then combine with Coolwhip and spread over cake.
I do the same but use jello instead and gop it off with cool whip and berries.
