The recipe doesn’t specify what kind of oil you should use for frying. I prefer using coconut oil – just because I like to use it in almost all of my cooking. If you want to go with another grated cheese instead of Parmesan, feel free to do so! You could also add a bit of garlic powder or paprika – this is a very versatile recipe and you can adjust the flavors to best compliment your main ingredient. Which brings me to one of the best things about this recipe; these patties pair well with just about anything! Personally, I would even have just these for a nice lunch!

I’m so glad sweet potatoes are so popular these days. They’re good for us, versatile, and delicious! My granddaughter is vegan now, and we use sweet potatoes in a lot of her recipes. Helps to fill her up, lol.
Ingredients
2-3 large sweet potatoes, peeled
2 large eggs, lightly beaten
1/3 cup parmesan cheese, grated
1 teaspoon brown sugar
1/2 teaspoon onion powder
kosher salt and freshly ground pepper, to taste
vegetable oil, for frying
Instructions:
Coarsely grate sweet potato and place in a large bowl. Pour lightly beaten eggs into shredded sweet potato and mix together. Add parmesan, brown sugar and onion powder, and season with salt and pepper. Mix until fully combined and sweet potato is thoroughly coated.
In a large Dutch oven or heavy-bottomed skillet, heat 1/8-inch vegetable oil over medium high heat until shimmering (but not smoking). Oil should sizzle when you drop a few shreds of sweet potato in.
Working in large spoonfuls, drop sweet potato mixture in large clumps into the hot oil. Using the back of a spatula, pat sweet potato rounds down into a flat disc.
Cook undisturbed for 2-3 minute, or until golden brown. Flip and cook other side until golden.
Remove to a paper towel-lined plate to drain and serve immediately.
