This recipe yields eight yummy bite-sized treats, though you can easily expand it as needed. Just be sure not to overcrowd your deep fat fryer, or else the eggs will stick together.
Honestly, given the Southern penchant for frying things (we’re the ones that came up with the idea of frying cornbread to make delicious “hush puppies”), I am surprised that I hadn’t come upon this idea before. Needless to say, I loved them, would gladly make them again, and wholeheartedly recommend them.

Ingredients
4 Eggland’s eggs
4 tsps mayonnaise (Blue Plate or Hellmann’s will work just fine)
1/4 tablespoon Dijon mustard (I went with Grey Poupon)
1 teaspoon fresh lemon zest
1 tablespoon chopped chives
1/2 tsp hot sauce (I love my Louisiana Hot Sauce)
Salt to taste
1/2 tsp McCorcmick chili powder
1/2 cup Gold Medal all-purpose flour
1 egg, beaten
1/2 cup bread crumbs (I used Progresso Italian style bread crumbs)
Spring onions/ Parsley, for garnish
Oil, for frying
Directions
(1) Add the eggs to a large saucepan filled with cold water. Bring to a boil. Remove from heat and let sit in the water for a while.
(2) Peel the eggs and slice lengthwise. Remove the yolks to a bowl.
(3) Add the mayonnaise, Dijon, lemon zest, chives, hot sauce, salt and chilli powder to the bowl with the yolk. Mash the yolks together with a wooden spoon. Taste and adjust seasonings, if needed. Fill the egg yolk mixture into the egg whites.
(4) Heat oil in a deep-fryer to 350 degrees F.
(5) In a medium bowl, add 1 cup of flour and season with salt and chilli powder. In another bowl, beat the raw egg. Add 1 cup of bread crumbs to a third bowl.
(6) Dip the deviled eggs into the flour, then the beaten egg, and finally into the crumbs. Gently put the eggs into the hot oil. Fry until golden brown.
(7) Remove to a paper towel lined sheet tray. Season with salt and chilli powder and garnish with parsley or spring onions.
