Sometimes, making a bit too much of a tasty classic side can turn into a happy accident. These Bacon Cheddar Potato Cakes make for very good use of those extra mashed potatoes and don’t take long to put together at all.
So I made another helping of that Slow Cooker Pork & Gravy recently, along with some delicious mashed potatoes to go with it, and it turns out that I had quite a bit extra mashed potatoes. (Oops! Sometimes, my eyes get a bit big for my stomach, I suppose.) Thankfully, with this potato cake recipe, I was able to recycle those extra potatoes without having to fuss too much over re-heating them and adding things to deal with the inevitable drying out (or, God forbid, throw some of them out – I try not to be wasteful when I can help it). I have to say, it all turned out rather nicely. Here’s to happy accidents!
